Make slaw

In a medium bowl combine shredded cabbage and grated carrot. In a small bowl whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth. Pour the dressing over the cabbage mixture and toss until evenly coated. Taste and adjust seasoning. Chill while you prepare the sandwich (at least 10 minutes); yields about 2 cups.

Prepare roll

Preheat a skillet or griddle over medium heat. Butter the cut sides of the roll lightly with the softened butter.

Toast roll and melt cheese

Place the roll buttered-side down on the hot skillet and press lightly for 30–45 seconds until golden. Move roll to the side of the skillet. Pile the sliced pastrami on the skillet to heat — spread it in an even layer and warm for 1–2 minutes until steaming. Lay the Swiss cheese over the warm pastrami and cover the skillet briefly (30–60 seconds) to melt the cheese.

Assemble sandwich

Spread 1–1½ tablespoons of 1000 Island dressing on the bottom half of the toasted roll. Using tongs or a spatula, transfer the hot pastrami with melted Swiss onto the dressed roll. Top the pastrami with 3–4 pickle slices, then add about ½ cup of the prepared cole slaw (or to taste). Spread remaining 1–1½ tablespoons of 1000 Island dressing on the top roll half and place on sandwich.

Optional press and serve

If desired, return the assembled sandwich to the skillet and press with a spatula or sandwich press for 30–60 seconds to meld flavors and warm through. Remove, slice in half, and serve immediately.
