Prep bread and cheese
Lay out 8 slices of white sandwich bread. On four slices place one slice of White American cheese and one slice of cheddar stacked together so each sandwich will have two cheese slices. If using mayonnaise instead of butter on the exterior, spread 1 tsp mayonnaise on the outside face of each of the remaining 4 bread slices; otherwise leave bread dry for buttering later.
Assemble sandwiches
Top each cheese-topped slice with the remaining bread slice, mayo or un-mayo side out, to form 4 sandwiches.
Butter exterior
If you did not use mayonnaise, spread 1 tablespoon of softened unsalted butter evenly on the outside of each sandwich slice (total 4 tbs). If you used mayonnaise earlier, you can skip additional butter or add 1/2 tbs butter per sandwich for extra browning.
Cook sandwiches
Heat a large nonstick skillet or griddle over medium-low to medium heat. Place 2 sandwiches in the pan (do not crowd). Cook 3–4 minutes on the first side until golden brown and the cheese begins to melt. Carefully flip with a spatula and cook the second side another 2–3 minutes until golden and cheese is fully melted. Reduce heat if bread browns too fast before cheese melts. Repeat with remaining 2 sandwiches. Total cooking time per batch ~6–8 minutes.
Rest and cut
Transfer cooked sandwiches to a cutting board and let rest 1 minute. Cut each sandwich diagonally into two triangles (or leave whole for younger children). Keep warm until serving.
Fries (serves 4)
Oven-baked method (recommended)
Preheat oven to 220°C (425°F). Spread frozen fries in a single layer on a large baking sheet; drizzle 2 tbs vegetable oil over them and toss to coat evenly. Bake for 20–25 minutes, flipping once halfway, until golden and crisp. Remove from oven and immediately season with 1 tsp fine salt. Keep warm until serving.
Shallow-fry method (alternative)
Heat 3–4 mm (about 1/4 inch) vegetable oil in a large skillet over medium-high heat. When oil is hot (around 175°C/350°F), add fries in a single layer without overcrowding and cook 5–7 minutes, stirring occasionally, until golden and crisp. Transfer to a paper towel-lined plate and season with salt.
Serve
Plate one grilled cheese sandwich (two triangles) with approximately 200 g of fries per plate. Add a small ramekin of ketchup (1 tablespoon per child) alongside. Serve warm.
