Burger Patties
Form patties
Place the ground beef in a bowl. Gently mix in the kosher salt, black pepper, and Worcestershire sauce if using; do not overwork. Divide into 4 even portions and shape into patties about 3/4 inch thick and slightly wider than the buns (they will shrink). Make a shallow indentation in the center of each patty with your thumb to prevent doming.
Cook patties
Heat a heavy skillet or griddle over medium-high heat and add the oil. When shimmering, add the patties (work in batches if necessary). Cook 3–4 minutes on the first side without pressing. Flip and cook 2–3 minutes on the second side for medium (adjust time for desired doneness). During the last 1 minute of cooking, place a slice of cheddar on each patty and cover the pan or tent with foil to melt the cheese.
Buns & Cheese
Sauce
Combine mayonnaise, ketchup, sweet pickle relish, vinegar, paprika, salt, and black pepper in a small bowl. Stir until smooth and taste; adjust seasoning or relish amount to preference. Refrigerate briefly if not using immediately.
Toppings & Assembly
Prepare vegetables: slice the tomato into 4 even slices and slice the onion into thin rings. Lay out lettuce leaves and pickles.
Assemble burgers: spread about 1 tablespoon of thousand island-style sauce on the bottom bun. Place a lettuce leaf on the sauce, then the cheeseburger patty. Top the patty with tomato slice(s), onion rings, and 2 pickle slices. Spread a little sauce on the top bun and place it on top. Repeat for remaining burgers.
Serve immediately with your choice of sides (fries, chips, or salad).
