Beef Patty
Form patties
Divide ground beef into two equal portions (about 8 oz each). Gently form each into a loose patty about 3/4-inch thick and slightly wider than the bun. Do not overwork the meat. Press a shallow dimple in the center of each patty with your thumb to help even cooking.
Season
Season both sides of the patties with kosher salt, black pepper, and a light drizzle (or brush) of Worcestershire sauce on each side.
Cook patties
Heat a cast-iron skillet or griddle over medium-high heat and add 1 tablespoon vegetable oil. When oil is shimmering, place patties on the pan. Cook for 3-4 minutes without moving, until a brown crust forms. Flip and cook 3 minutes more for medium (adjust time for desired doneness). During the last 1 minute of cooking, top each patty with two slices of cheddar cheese to melt. Remove patties from pan and tent with foil to rest.

Onion Ring
Prepare onion
Peel the onion and slice into 3/4-inch thick rings. Separate rings and set aside.
Make batter
In a medium bowl, whisk together the flour, cornstarch, baking powder and 1/2 teaspoon salt. Gradually whisk in cold sparkling water until a thick, smooth batter forms. The cold sparkling water and cornstarch keep the coating crisp.
Fry onion rings
Pour oil into a medium saucepan or deep skillet to a depth of about 1 1/2 inches and heat to 350°F (175°C) or until a breadcrumb sizzles on contact. Working in batches, dip onion rings into the batter, letting excess drip off, then carefully lower into the hot oil. Fry until golden brown, 2–3 minutes per batch. Use a slotted spoon to transfer to a paper-towel–lined rack and sprinkle lightly with salt. Keep warm in a 200°F (95°C) oven if desired.
Assembly & Condiments
Assemble
Spread 2 tablespoons BBQ sauce on the bottom bun. Place the cheese-melted beef patty on the sauced bottom bun. Lay two bacon strips over the patty. Place one or two onion rings on top of the bacon. Add optional pickles or shredded lettuce if using. Spoon remaining BBQ sauce on the top bun and close the burger.
Serve immediately with fries or salad while the patty is hot and the onion ring is crisp.
