Cooking Instructions

  1. 1

    Prepare the Chicken

Preheat your oven to 425°F (220°C). In a bowl, mix the piri piri sauce with olive oil, salt, black pepper, paprika, garlic powder, and lemon juice. Rub this mixture all over the chicken, making sure to get it under the skin for maximum flavor.

  2. 2

    Roast the Chicken

Place the seasoned chicken on a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with its juices halfway through cooking.

  3. 3

    Prepare the Potatoes

While the chicken is roasting, wash and scrub the fingerling potatoes. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until tender. Drain and set aside.

  4. 4

    Make the Buttermilk Dressing

In a bowl, whisk together buttermilk, mayonnaise, salt, and pepper. Adjust seasoning to taste.

  5. 5

    Combine Salad Ingredients

Slice the cooked fingerling potatoes and toss them in a large bowl with the buttermilk dressing. Chop the scallions and add them to the salad. Mix gently.

  6. 6

    Serve

Once the chicken is roasted, let it rest for about 10 minutes. Carve the chicken and serve it alongside the warm fingerling potato salad.
