Directions for Making Pasteis de Nata
- 1
Prepare the Puff Pastry
Roll out the puff pastry on a lightly floured surface and cut it into circles that fit into a muffin tin. Gently press the pastry into the tins and refrigerate while preparing the filling.
- 2
Make the Custard Filling
In a saucepan, combine milk, heavy cream, and sugar over medium heat. Stir until the sugar dissolves. In a separate bowl, whisk together the egg yolks, cornstarch, and vanilla extract. Gradually add the warm milk mixture to the egg mixture, whisking constantly.

Cook the Custard
Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens. Remove from heat and let it cool slightly.
- 4
Fill the Pastry Shells
Preheat the oven to 250°C (482°F). Pour the custard filling into the prepared pastry shells, filling them about three-quarters full.
- 5

Bake the pastries in the preheated oven for about 15-20 minutes, or until the tops are browned and caramelized.
