    Prepare Chickpeas

    If using dried chickpeas, soak them overnight and then cook until tender. If using canned, drain and rinse them.

    Blend Ingredients

    In a food processor, combine chickpeas, parsley, cilantro, jalapeño, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until combined but still chunky.

    Form Falafel Balls

    Using your hands, form the mixture into small balls or patties and place them on a plate.

    Heat Oil

    In a large skillet, heat olive oil over medium heat. You need enough oil to cover the bottom of the pan.

    Fry Falafel

    Once the oil is hot, carefully add the falafel balls to the pan, making sure not to overcrowd. Fry until golden brown, about 3-4 minutes on each side.

    Drain and Serve

    Remove the falafel from the skillet and drain on paper towels. Serve warm with diced pickled lemon on top.
