Prepare the Potatoes
Peel and cut the potatoes into bite-sized cubes. Rinse under cold water and pat dry with a kitchen towel.

Fry the Potatoes
In a large skillet, heat the olive oil over medium-high heat. Add the potatoes and season with salt. Fry until golden and crispy, about 15-20 minutes, stirring occasionally.

Make the Picante Tomato Sauce
In a separate saucepan, combine the tomato sauce, paprika, garlic powder, and cayenne pepper. Stir well and simmer over low heat for about 10 minutes.

Prepare the Duke's Mayo Dressing
In a small bowl, mix the Duke's mayonnaise with lemon juice and chopped parsley. Stir until well combined.

Serve
Once the potatoes are cooked, remove them from the heat and drain on paper towels. Serve the potatoes hot, drizzled with the picante tomato sauce and a dollop of the mayo dressing on the side.
