    Cut the Potatoes

    Wash and peel the Russet potatoes. Cut them into fries of equal thickness.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Heat the Oil

    In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries to the hot oil in batches. Fry for 5-7 minutes until golden brown and crispy. Remove and drain on paper towels.

    Season and Serve

    While the fries are still hot, drizzle with truffle oil, sprinkle with salt, black pepper, and grated Romano cheese. Toss to combine. Garnish with fresh parsley before serving.
