1. Prepare the Steak

Take the Wagyu New York Strip steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels.

2. Season the Steak

Generously season both sides of the steaks with sea salt and freshly ground black pepper.

3. Preheat the Pan

Heat a heavy skillet (preferably cast iron) over high heat until it is smoking hot. Add the olive oil and swirl to coat the pan.

4. Sear the Steak

Place the steaks in the skillet and sear for 3-4 minutes on each side, creating a nice crust. Avoid moving the steaks around while they cook.

5. Add Aromatics

In the last minute of cooking, add the butter and rosemary to the pan. Use a spoon to baste the steaks with the melted butter and aromatics.

6. Rest the Steak

Remove the steaks from the skillet and transfer them to a cutting board. Cover loosely with foil and let them rest for 5-10 minutes before slicing.

7. Serve

Slice against the grain and serve the Wagyu New York Strip steaks with your favorite sides.
