    Prepare the Roasted Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap in foil, and roast for 30-35 minutes until soft.

    Sauté the Spinach

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 3-5 minutes. Season with salt, black pepper, and red pepper flakes.

    Mix the Cheeses

    In a mixing bowl, combine the sautéed spinach, crumbled chevre, and chopped brie (remove the rind if desired). Squeeze the roasted garlic cloves out of their skins and add them to the mixture along with fresh thyme. Mix until well combined.

    Prepare for Baking

    Preheat the oven to 375°F (190°C). Transfer the cheese and spinach mixture into a baking dish and spread evenly.

    Bake the Mixture

    Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

    Prepare the Baguette Croustades

    While the mixture is baking, slice the baguette into thin rounds, brush with olive oil, and toast in the oven for 5-7 minutes until crispy.

    Grill the Flatbread

    On a grill or grill pan, lightly grill the flatbreads for 1-2 minutes on each side until warm and slightly charred.

    Serve

    Remove the bake from the oven, let cool slightly, and serve with the crispy baguette croustades and warm grilled flatbread.
