    Prepare the Filet Mignon

    Season the filet mignon medallions generously with salt, black pepper, and smoky Cajun spice. Let them sit at room temperature for about 15 minutes.

    Cook the Filet Mignon

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the medallions for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from skillet and let rest.

    Prepare the Shrimp

    In the same skillet, add another tablespoon of olive oil. Toss the shrimp with the remaining smoky Cajun spice. Cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque.

    Make the Herbed Butter Sauce

    In a small saucepan, melt the butter over low heat. Stir in the fresh herbs and cook for 1-2 minutes until fragrant. Remove from heat.

    Plate the Dish

    On a serving plate, place the filet mignon medallions and top with the pan-seared shrimp. Drizzle the herbed butter sauce over the top and serve with a side of Creole remoulade.
