    Wash and peel the russet potatoes. Cut them into thin, shoestring-sized strips, about 1/8 inch thick. Place the cut fries in a bowl of cold water to remove excess starch.

    Let the fries soak in cold water for at least 30 minutes to an hour. This helps to achieve a crispier texture.

    Drain the water and pat the fries dry using a clean kitchen towel or paper towels to remove moisture.
