    Prepare the Lobster

    Bring a large pot of salted water to a boil. Add the lobster tails and cook for about 8-10 minutes until they turn bright red. Remove the tails from the pot and let them cool before extracting the meat.

    In a large pot, melt the butter over medium heat. Add the chopped shallots and minced garlic, sautéing until they are translucent and fragrant.

    Build the Base

    Stir in the tomato paste and cook for an additional 2 minutes. Pour in the white wine, scraping the bottom of the pot to deglaze, and let it simmer for about 5 minutes.

    Add Stock and Simmer

    Add the fish stock to the pot, bring it to a gentle boil, and let it simmer for 15 minutes to develop the flavors.

    Incorporate Cream and Seasoning

    Lower the heat and stir in the heavy cream. Season with salt and black pepper. Cook for another 5 minutes, allowing the soup to thicken slightly.
