Prepare the Pomace
Collect the leftover grape pomace after winemaking. Make sure it is fresh and has no mold.

Fermentation
In a fermentation vessel, combine the grape pomace with water. Add the yeast to initiate fermentation. Allow it to ferment for about 7-10 days at a controlled temperature (around 20°C).

Distillation
After fermentation, transfer the mixture to a still. Heat it slowly to distill the alcohol from the pomace, collecting the distillate in separate containers.

You can age the grappa in oak barrels for several months to enhance its flavor, or bottle it directly after distillation.
