Preparation Steps
- 1
Roast Roma Tomatoes
Preheat the oven to 400°F (200°C). Cut the Roma tomatoes in half, drizzle with olive oil, and sprinkle with salt and pepper. Place them cut side up on a baking sheet and roast for 25-30 minutes until caramelized.
- 2
Prepare Spiced Pecans
In a skillet over medium heat, combine pecans, brown sugar, cayenne pepper, and dried herbs. Stir for about 5-7 minutes until pecans are toasted and sugar is melted. Remove from heat and let cool.
- 3
Make the Dressing
In a small bowl, whisk together olive oil, garlic powder, lemon juice, salt, and black pepper to make the Caesar dressing.
- 4
Assemble the Salad
In a large bowl, toss the chopped Romaine lettuce with the dressing until well coated. Add the roasted tomatoes, herbed croutons, spiced pecans, and Romano cheese. Toss gently to combine.
- 5
Serve
Transfer the salad to a serving platter or individual bowls. Garnish with additional Romano cheese if desired and serve immediately.
