Brewing Process

    Mashing

    In a large pot, heat 3 liters of water to about 68°C (155°F). Add the pale malt and caramel malt, stirring well to combine. Maintain the temperature for 60 minutes.

    Lautering

    After mashing, drain the liquid, known as wort, into another pot. Rinse the grains with an additional 2 liters of water at 75°C (170°F) to extract more sugars.

    Boiling

    Bring the wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. In the last 15 minutes, add the Centennial hops.

    Cooling

    After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal with an airlock and let it ferment for 1-2 weeks at a consistent temperature.

    Bottling

    Once fermentation is complete, dissolve priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles and cap them. Let them carbonate for another 1-2 weeks.

    After carbonation, chill the bottles in the fridge, pour into a glass, and enjoy your homemade Carolina Brewery beer!
