Asparagus and Hollandaise Sauce

    Prepare the Asparagus

    Trim the tough ends off the asparagus spears and rinse them under cold water. Bring a pot of salted water to a boil and blanch the asparagus for about 3-4 minutes until tender but still crisp. Drain and set aside.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk the egg yolks and lemon juice together until pale and slightly thickened. Place the bowl over a pot of simmering water (double boiler) and continue to whisk. Slowly drizzle in the melted butter while whisking constantly until the sauce is thick and creamy. Season with salt, cayenne pepper, and black pepper to taste.

    Combine and Serve

    Arrange the blanched asparagus on a serving platter and drizzle the hollandaise sauce over the top. Serve immediately while warm.
