Preparation of Veal

Pound the Veal
Pound the veal cutlets to about 1/4 inch thickness using a meat mallet. This will ensure they cook evenly and become tender.

Season both sides of the cutlets with salt and black pepper to taste.

Place the all-purpose flour in a shallow dish.

In another shallow dish, beat the eggs until well blended.

Breadcrumb Mixture
In a third dish, combine the bread crumbs, grated Parmesan cheese, salt, and black pepper.
Breading Process

Flour Dredging
Dredge each veal cutlet in the flour, shaking off any excess.

Dip the floured cutlet into the beaten eggs, allowing the excess to drip off.

Coat the cutlet with the breadcrumb mixture, pressing gently to ensure the crumbs stick.
Cooking Veal

Heat Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Fry Cutlets
Carefully add the breaded veal cutlets to the skillet, cooking for about 3-4 minutes on each side until golden brown and cooked through.

Once cooked, transfer the cutlets to a paper towel-lined plate to drain excess oil.
Sauce Preparation

Chop Garlic and Green Onions
Finely chop the garlic cloves and green onions.

Add the green onions and sauté for another 2 minutes until softened.
