Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.
Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
Sauté the Vegetables
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the sliced green onions and chopped artichoke hearts, cooking for another 2-3 minutes.
Add Spinach and Liquids
Stir in the chopped spinach and cook until wilted. Pour in the white wine and lemon juice, scraping the bottom of the skillet to deglaze. Allow it to simmer for about 5 minutes.
Combine Chicken with Sauce
Return the seared chicken breasts to the skillet. Spoon the vegetable and sauce mixture over the chicken, and let it simmer together for an additional 5 minutes.
Finish and Serve
Sprinkle grated Parmesan cheese over the chicken and let it melt slightly. Serve hot, garnished with additional green onions if desired.
