Prepare the Ingredients
Start by mincing the garlic and chopping the tomatoes and green onions. Set them aside.
Cook the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken breasts with salt and black pepper. Cook the chicken for about 6-7 minutes on each side, or until they are golden brown and cooked through. Remove from skillet and set aside.
Sauté Garlic and Tomatoes
In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Then add the chopped tomatoes and capers. Cook for another 3-4 minutes until the tomatoes soften.
Combine and Serve
Return the cooked chicken to the skillet with the tomato and garlic mixture. Allow everything to simmer together for about 2-3 minutes. Serve the chicken on a bed of sautéed spinach, topped with the tomato-caper sauce and garnished with chopped green onions.
