Start by tenderizing the veal cutlets with a meat mallet until they are about 1/4 inch thick. This will help them cook evenly.

Set Up Breading Station
In one shallow dish, place the all-purpose flour. In a second shallow dish, beat the eggs and mix with milk, salt, and black pepper.

Bread the Cutlets
Dredge each veal cutlet in the flour, shaking off excess. Then dip them into the egg mixture, allowing any excess to drip off, and finally place them back in the flour to coat. Set aside on a plate.

Cook the Veal
In a large skillet, heat the olive oil over medium-high heat. When hot, add the breaded veal cutlets in batches, cooking for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Make the Sauce
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the white wine, scraping up any browned bits from the skillet. Let it simmer for 2-3 minutes until reduced slightly.

Stir in the lemon juice and chopped parsley. Return the veal cutlets to the skillet, turning to coat them in the sauce. Sprinkle with grated Parmesan cheese before serving.
