Method

Pasta Preparation

  1. 1

    Cook the Tortellini

Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and set aside.

Sauce Preparation

  1. 2

    Sauté the Meat

In a large skillet, heat the olive oil over medium heat. Add the pancetta or prosciutto and cook until crispy, about 5-7 minutes.

  2. 3

    Add Garlic

Mince the garlic and add it to the skillet with the meat; sauté for an additional 1-2 minutes until fragrant.

  3. 4

    Make the Cream Sauce

Reduce the heat to low and add the heavy cream to the skillet, stirring to combine. Gradually add the Parmesan cheese, stirring until melted and the sauce is creamy.

  4. 5

    Season the Sauce

Add black pepper and salt to taste. Stir in the frozen peas and allow them to heat through, about 2-3 minutes.

Combining Ingredients

  1. 6

    Combine Tortellini and Sauce

Add the cooked tortellini to the skillet with the creamy sauce. Toss gently to coat the pasta evenly with the sauce and peas.

Garnishing

  1. 7

    Serve and Garnish

Divide the tortellini carbonara among serving plates, and garnish with fresh parsley. Serve immediately.
