Spinach Florentine Ravioli Recipe

Pasta Dough

    Make the Pasta Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Add the olive oil.

    Knead the Dough

    Using a fork, gently beat the eggs and gradually incorporate the flour until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Filling

    Prepare the Spinach

    In a large skillet, sauté minced garlic in a bit of olive oil until fragrant. Add spinach and cook until wilted. Remove from heat and let cool.

    Make the Filling

    In a mixing bowl, combine the cooked spinach, mozzarella, ricotta, parmesan, nutmeg, salt, and pepper. Mix well until combined.

Alfredo Sauce

    Prepare the Alfredo Sauce

    In a saucepan, melt the butter over medium heat. Add the heavy cream and bring to a simmer.

    Finish the Sauce

    Stir in the parmesan cheese, garlic powder, salt, and pepper. Cook until the sauce thickens slightly (about 5 minutes). Remove from heat.

Assembly

    Roll Out the Dough

    After the dough has rested, roll it out using a pasta machine or rolling pin until thin.

    Stuff the Ravioli

    Cut the rolled dough into squares. Place a teaspoon of filling in the center of each square. Moisten the edges with water, fold over, and press to seal.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4-5 minutes until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the cooked ravioli and drizzle with Alfredo sauce. Serve warm.
