    Cook the Spaghetti

    In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

    Sauté Prosciutto and Onion

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the prosciutto and cook for an additional 2-3 minutes until crispy.

    Prepare the Cream Sauce

    In a mixing bowl, whisk together the heavy cream, egg yolks, grated Parmesan cheese, and black pepper. Mix until well combined.

    Combine Spaghetti with Sauce

    Add the drained spaghetti to the skillet with the prosciutto and onion. Reduce the heat to low, and pour the cream mixture over the pasta, tossing quickly to combine. If the sauce is too thick, add reserved pasta water, a little at a time, until the desired consistency is achieved.

    Season and Serve

    Taste the spaghetti and add salt as needed. Serve immediately, garnished with extra Parmesan cheese and freshly cracked black pepper if desired.
