Cook the Lasagna Noodles
In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and minced garlic, sautéing until translucent. Then, add the sliced mushrooms and zucchini, and cook until softened. Finally, add the fresh spinach and cook until wilted. Season with salt and black pepper, then remove from heat.

Make the Cream Sauce
In a saucepan, melt the remaining butter over medium heat. Whisk in the flour, cooking for 1-2 minutes until golden. Gradually add the milk and cream, whisking constantly until the sauce thickens. Stir in the mozzarella cheese, Parmesan cheese, salt, black pepper, and a pinch of nutmeg until melted and smooth.

Layer the Lasagna
In a greased baking dish, spread a thin layer of the cream sauce at the bottom. Place a layer of lasagna noodles over the sauce. Top with a portion of the seafood mixture, followed by a portion of the sautéed vegetables, and then more cream sauce. Repeat the layers until all ingredients are used, finishing with a layer of noodles and cream sauce on top. Sprinkle any remaining mozzarella and Parmesan cheese on top.

Bake the Lasagna
Preheat your oven to 180°C (350°F). Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbling.

Let the lasagna sit for 10 minutes before slicing. Serve warm, garnished with fresh herbs if desired.
