Preparing the Ravioli

Bread the Ravioli
Take each ravioli, dredge it in flour, dip it in the beaten eggs, and then coat it in the breadcrumb mixture, pressing gently to adhere.

Chill the Breaded Ravioli
Place the breaded ravioli on a baking sheet and refrigerate for at least 30 minutes to help the breading adhere.
Frying the Ravioli

Heat the Oil
In a deep frying pan, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Ravioli
Carefully add the chilled, breaded ravioli to the hot oil in batches. Fry for 3-4 minutes or until golden brown, turning occasionally for even cooking.

Drain the Ravioli
Using a slotted spoon, remove the fried ravioli and drain on paper towels to remove excess oil.
Making the Marinara Sauce

Simmer the Sauce
Add the crushed tomatoes, oregano, basil, sugar, and season with salt and pepper. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.
Serving

Plate the Dish
Serve the hot fried ravioli on a platter alongside the marinara sauce for dipping.
