    Rinse the mussels under cold running water, scrubbing the shells with a brush to remove any debris. Remove the beards by pulling them off with your fingers.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced shallots, and sauté for about 2-3 minutes until they are fragrant and translucent.

    Deglaze with Wine

    Pour in the white wine and bring to a simmer. Let it cook for about 2 minutes to reduce slightly and enhance the flavors.

    Add Mussels

    Carefully add the cleaned mussels to the pot. Stir them into the aromatic mixture, ensuring they are well-coated.

    Choose Your Sauce

    Pour in your choice of scampi sauce or marinara sauce over the mussels. If you prefer a spicy kick, add the red pepper flakes at this stage. Stir gently to combine.

    Cover the pot and let the mussels simmer for about 5-7 minutes, or until they have opened up. Discard any mussels that remain closed.
