    Prepare the Ingredients

    Wash and dry the basil leaves. Peel and mince the garlic cloves. Dice the fresh tomatoes and set aside.

    Sauté Garlic

    In a medium saucepan, heat the Caprese olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes

    Add the diced tomatoes to the saucepan with the sautéed garlic. Stir well and cook for about 5-7 minutes until the tomatoes start to break down and release their juices.

    Season the Mixture

    Stir in the salt and black pepper. Allow the mixture to simmer for another 2-3 minutes.

    Combine with Cheeses

    Remove the saucepan from the heat. Gently fold in the homemade cheese and fresh mozzarella cheese until evenly combined.

    Finish with Balsamic

    Drizzle balsamic vinegar over the mixture and stir gently to incorporate. Taste and adjust seasoning if necessary.
