Cook the Lamb Chops
Preheat your oven to 400°F (200°C). Heat a large oven-safe skillet over medium-high heat. Once hot, add the lamb chops and sear for about 3-4 minutes on each side until browned. Transfer the skillet to the preheated oven and roast for an additional 10-12 minutes for medium-rare. Adjust cooking time based on your preferred doneness.

Make the Porcini Sauce
While the lamb is cooking, soak the porcini mushrooms in hot water for about 15 minutes until softened. Drain and chop them finely. In a saucepan, combine the chopped mushrooms and heavy cream over medium heat. Simmer for about 5-7 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

Prepare the Spinach
In a separate skillet, melt the butter over medium heat. Add the spinach and sauté for about 3-5 minutes until wilted. Season with salt and pepper to taste. If desired, sprinkle with grated Parmesan cheese before serving.

Serve
Once the lamb chops are cooked, remove them from the oven and let them rest for a few minutes. Plate the lamb chops, drizzle with porcini sauce, and serve alongside the sautéed spinach.
