Method

Appetizers

  1. 1

    Prepare the Baguette

Preheat your oven to 375°F (190°C). Slice the baguette into ½ inch thick slices and arrange them on a baking sheet.

  2. 2

    Toast the Baguette

Brush each slice of baguette with olive oil and sprinkle with a pinch of salt. Toast in the preheated oven for about 10-12 minutes, or until golden and crisp.

  3. 3

    Make the Pesto

In a food processor, combine fresh basil leaves, pine nuts, garlic, olive oil, and salt. Blend until smooth. If needed, adjust the consistency with additional olive oil.

  4. 4

    Prepare the Tomatoes

Dice the tomatoes into small pieces and season with salt and pepper to taste.

  5. 5

    Assemble the Bruschetta

Spread a generous layer of goat cheese on each toasted baguette slice. Top with a spoonful of diced tomatoes and a dollop of homemade pesto.

  6. 6

    Add Marinara and Mozzarella

Spoon a small amount of marinara sauce onto each bruschetta and top with slices of homemade mozzarella cheese.

  7. 7

    Final Baking

Return the assembled bruschetta to the oven for an additional 5-7 minutes, or until the mozzarella is melted and bubbly.

  8. 8

    Serve

Remove from the oven and let cool slightly before serving. Garnish with extra basil if desired.
