Method

Appetizers

  1. 1

    Preparing the Clams

Rinse the little neck clams under cold water to remove any sand or grit. Set them aside in a bowl.

  2. 2

    Sautéing Garlic

In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

  3. 3

    Adding Wine

Pour in the white wine and increase the heat to high. Bring the mixture to a boil to allow the alcohol to evaporate, about 2-3 minutes.

  4. 4

    Cooking the Clams

Add the rinsed clams to the pot along with the red pepper flakes, salt, and black pepper. Cover the pot with a lid and let the clams steam for about 5-7 minutes until they open up.

  5. 5

    Incorporating Sauce

Once the clams are open, stir in the marinara sauce and chopped fresh parsley. Allow the mixture to simmer for an additional 2-3 minutes.

  6. 6

    Serving

Remove from heat and serve hot with lemon wedges on the side for squeezing over the clams.
