    Prepare the Eggplant

    Slice the eggplants into 1/2 inch thick rounds and sprinkle with salt. Allow them to sit for about 30 minutes to draw out moisture.

    Rinse and Dry

    After 30 minutes, rinse the eggplant slices under cold water to remove excess salt. Pat them dry with paper towels.

    Fry the Eggplant

    In a large skillet, heat olive oil over medium heat. Fry the eggplant slices in batches until they are golden brown on both sides. Drain on paper towels.

    Layer the Ingredients

    In a baking dish, spread a layer of marinara sauce on the bottom. Place a layer of fried eggplant, followed by a layer of mozzarella and Parmesan cheese. Sprinkle with basil leaves, black pepper, garlic powder, and Italian seasoning. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.

    Preheat the oven to 375°F (190°C). Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
