Calamari Preparation

Prepare the Calamari
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Whisk together until well combined.

Coat the Calamari
Dip the calamari rings into the beaten eggs, allowing any excess to drip off. Then, dredge them in the flour mixture, ensuring they are well coated.

Add Breadcrumbs
After coating with the flour mixture, press the calamari rings into the breadcrumbs until fully covered. Set aside on a plate.

Heat the Oil
In a large, deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Cook the Marinara Sauce
In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the Tomatoes and Seasonings
Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Let the sauce simmer for about 10 minutes, stirring occasionally.

Finish the Sauce
Remove from heat and stir in the fresh basil. Adjust seasoning to taste if needed.
