Prepare the Pasta
Preheat the oven to 375°F (190°C). Bring a large pot of salted water to a boil. Cook the manicotti pasta tubes for 6-8 minutes until slightly softened but not fully cooked. Drain and let cool slightly.

Make the Cheese Filling
In a mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, egg, parsley, garlic powder, salt, and black pepper. Mix until well combined.

Stuff the Manicotti
Using a spoon or a piping bag, carefully fill each manicotti tube with the cheese mixture. Place the stuffed manicotti in a greased baking dish.

Add the Sauce
Pour the tomato sauce evenly over the stuffed manicotti. Sprinkle the remaining shredded mozzarella on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

Remove from the oven and let it sit for 5 minutes before serving. Enjoy your baked manicotti!
