House-Made Brandied Cherry Juice

Prepare the Brandied Cherry Juice
In a medium saucepan, combine the pitted fresh cherries, granulated sugar, and water. Heat over medium heat until the sugar dissolves and the mixture begins to simmer.

Simmer the Mixture
Reduce heat to low and let simmer for about 10-15 minutes, stirring occasionally until the cherries are soft and the liquid is syrupy.

Add Alcohol
Remove from heat and stir in the vodka or brandy. Let the mixture cool completely.

Strain the Juice
Once cooled, strain the mixture through a fine mesh sieve into a clean jar, pressing down on the cherries to extract all the juice. Discard the solids.

Mix the Cocktail
In a cocktail shaker, combine 2 oz of Mt. Gay Eclipse Rum, 1 oz of Cynar, and 1 oz of the house-made brandied cherry juice.

Shake with Ice
Fill the shaker with ice and shake well until chilled, about 15 seconds.

Strain into Glass
Strain the mixture into a chilled cocktail glass.

Garnish
Garnish with a slice of apple and two brandied cherries on top.
