    Chill the Glass

    Begin by chilling an old-fashioned glass or a rocks glass. Fill it with ice water and set it aside while you prepare the cocktail.

    Prepare the Sugar

    In a separate mixing glass, place the sugar cube. Add the Peychaud's bitters and Angostura bitters onto the sugar cube. Muddle the sugar and bitters together until the sugar is dissolved.

    Add the Rye

    Pour in the Rittenhouse Rye Whiskey into the mixing glass with the muddled sugar and bitters mixture. Add ice to the glass and stir gently until well chilled.

    Prepare the Glass with Absinthe

    Discard the ice water from the chilled glass. Pour the Absinthe into the glass, swirling it around to coat the inside thoroughly. Then, discard the excess Absinthe.

    Strain the Cocktail

    Using a strainer, pour the chilled rye mixture from the mixing glass into the prepared glass.

    Garnish and Serve

    Express the oils from the lemon peel over the drink by holding it over the cocktail and giving it a gentle twist. Drop the peel into the glass as a garnish. Serve immediately.
