Prepare the Filling
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add fresh spinach and cook until wilted. Remove from heat and let cool. Once cooled, mix in the cream cheese, salt, and pepper.

Stuff the Pork Tenderloin
Preheat your oven to 375°F (190°C). Cut a lengthwise slit down the center of the pork tenderloin, being careful not to cut all the way through. Open the tenderloin like a book and spread the spinach mixture evenly inside.

Wrap with Bacon
Wrap the stuffed tenderloin with bacon slices, securing them with toothpicks if necessary.

Roast the Tenderloin
Place the wrapped pork tenderloin in a baking dish and roast in the preheated oven for about 25-30 minutes or until the internal temperature reaches 145°F (63°C).

Rest and Serve
Remove the tenderloin from the oven and let it rest for 5 minutes before slicing. Serve with roasted potatoes and seasonal vegetable medley.
