Tofu Preparation

Prepare the Tofu
Drain the tofu and press it between paper towels or a clean kitchen towel to remove excess moisture. Cut the tofu into 1-inch thick slices.

Season the Tofu
Sprinkle the sliced tofu with salt and black pepper, ensuring each piece is evenly coated.

Breading Station
Set up a breading station with three plates: one with flour, one with a beaten egg, and one with panko breadcrumbs.

Bread the Tofu
Coat each tofu slice first in flour, then dip it in the beaten egg, and finally coat it with panko breadcrumbs. Ensure each slice is fully covered.

Fry the Tofu
In a large skillet, heat vegetable oil over medium heat. Once hot, add the breaded tofu slices and fry until golden brown and crispy on both sides, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.

Make the Sauce
In a small saucepan, combine ketchup, soy sauce, Sriracha, brown sugar, apple cider vinegar, garlic powder, onion powder, and smoked paprika. Stir well to combine.

Simmer the Sauce
Place the saucepan over medium heat and bring the sauce to a simmer. Reduce the heat to low and let it simmer for about 10 minutes, stirring occasionally.
Assembly

Serve the Tofu Katsu
Place the crispy tofu katsu on a serving plate and drizzle with the spicy BBQ sauce. Serve hot with rice or a fresh salad.
