    Prepare Vegetables

    Wash and cut the vegetables into appropriate sizes for dipping. Cut carrot sticks to about 4 inches long, celery sticks to about 4 inches long, cucumber into slices, and bell peppers into strips.

    Arrange on Platter

    Place the prepared vegetable sticks and cherry tomatoes on a large platter or dish. Make it visually appealing by arranging the vegetables in a colorful pattern.

    Serve with Dips

    Serve the vegetable platter with bowls of hummus and ranch dressing for dipping.

Soup

    Sauté Base

    In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

    Add Vegetables

    Stir in the diced carrots and celery, cooking for another 5 minutes until they start to soften.

    Add Broth and Tomatoes

    Pour in the vegetable broth and add the diced tomatoes (with their juices). Bring the mixture to a boil.

    Add Remaining Vegetables

    Once boiling, add the green beans and zucchini. Reduce heat to a simmer and cook for 20-25 minutes until all vegetables are tender.

    Season with salt and black pepper to taste. Stir in fresh parsley before serving.
