Prep the Pork
Cut the pork tenderloin into thin strips, about 1 inch wide. Season with salt and black pepper.

Chop the Vegetables
Slice the red and green bell peppers into thin strips. Dice the onion. Mince the garlic cloves and grate the ginger.

Prepare the Sauce
In a bowl, mix together the soy sauce, Sriracha sauce, sesame oil, and red pepper flakes.

Stir-Fry the Pork
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the pork strips and stir-fry until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic, grated ginger, and diced onion. Stir-fry for about 2 minutes until fragrant. Add the sliced bell peppers and continue to stir-fry for another 3-4 minutes until they are tender-crisp.

Return the cooked pork to the skillet. Pour the sauce over the mixture and stir well to combine. Cook for another 2-3 minutes until everything is heated through. Taste and adjust seasoning with salt if necessary.
