Marinade Preparation

Prepare the Marinade
In a large bowl, combine the soy sauce, gochujang, sesame oil, sugar, minced garlic, grated ginger, and black pepper. Mix well.

Marinate the Pork
Add the thinly sliced pork shoulder to the marinade. Toss to coat the pork evenly and cover the bowl with plastic wrap. Refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cooking Rice

Prepare the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat.

Cook the Rice
Once boiling, reduce the heat to low, cover with a lid, and simmer for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
Stir-Fry Preparation

Cook the Pork
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Remove the marinated pork from the fridge and add it to the skillet in a single layer. Cook for about 5-7 minutes until browned and cooked through, stirring occasionally.

Add Vegetables
Add the chopped green onions, julienned carrot, sliced bell pepper, and sliced mushrooms to the skillet. Stir-fry for an additional 3-5 minutes until the vegetables are tender but still crisp.
Serving

Serve the Dish
Spoon the cooked rice onto plates and top with the spicy pork and vegetable stir-fry. Garnish with additional green onions if desired.
