Shrimp Tempura Preparation

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the ice water, stirring gently until just combined. The batter should be lumpy and cold.

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Shrimp

    Dip each shrimp into the tempura batter, allowing excess to drip off.

    Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Mahi Mahi Jun Preparation
