    Peel and devein the shrimp, leaving the tails intact. Rinse under cold water and pat dry with paper towels.

    In a bowl, combine garlic powder, salt, black pepper, and lemon juice. Add the shrimp and toss to coat. Let it marinate for 15 minutes.

    In a large bowl, whisk together all-purpose flour, cornstarch, and baking powder. In another bowl, beat the egg and then add the cold water. Combine the wet and dry ingredients, mixing gently until just combined; the batter should be lumpy.

Frying

    In a deep saucepan or frying pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dip each marinated shrimp into the tempura batter, allowing excess batter to drip off. Carefully place the shrimp in the hot oil, frying a few at a time to avoid overcrowding. Fry for 2-3 minutes until golden brown and crispy, then remove and drain on paper towels.
