Prepare Mahi Mahi
Season the mahi mahi fillets with salt, black pepper, paprika, garlic powder, and lemon juice. Let them marinate for about 15 minutes.

Prepare Shrimp Katsu
If using frozen shrimp katsu, thaw them according to package instructions. If making from scratch, follow the breading process below.

Breading Setup
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Coat Shrimp
Dip each shrimp in flour, shaking off excess, then into the beaten eggs, and finally coat with panko breadcrumbs. Ensure each shrimp is fully coated.
Cooking

Fry Mahi Mahi
In a large skillet, heat 1 cup of vegetable oil over medium-high heat. Once hot, add the mahi mahi fillets and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and drain on paper towels.

Fry Shrimp
In the same skillet, add more oil if needed and fry the breaded shrimp in batches for about 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.

Cook Shrimp Katsu
In the same skillet, heat the shrimp katsu for about 3-4 minutes on each side until heated through and crispy.
Serving

Plate the Seafood Combo
Arrange the mahi mahi, fried shrimp, and shrimp katsu on a serving platter. Serve with lemon wedges and your favorite dipping sauces.
