Prepare Ice Cream

Scoop Ice Cream
Scoop the ice cream into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper. Freeze for at least 2 hours or until solid.

Cook the Mixture
Cover the bowl with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 1 minute. Stir the mixture, then microwave for an additional 1 minute. Stir again, and microwave for another 30 seconds until the dough is translucent and sticky.

Dust with Cornstarch
Place the mochi dough onto a surface dusted with cornstarch. Dust the top of the dough with more cornstarch to prevent sticking. Allow the dough to cool slightly.
Assemble Mochi Ice Cream

Shape the Mochi
Once the dough is cool enough to handle, divide it into small portions (about 2 tablespoons each). Flatten each portion into a round disc.

Wrap the Ice Cream
Take a frozen ice cream ball and place it in the center of the mochi disc. Gently fold the mochi around the ice cream, pinching the edges to seal it completely. Make sure there are no holes.

Freeze Again
Place the wrapped mochi ice cream back on the parchment-lined baking sheet and freeze for at least 30 minutes to firm up.
