Dumpling Preparation

Make the Filling
In a bowl, combine the ground pork, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are combined.

Fill the Dumpling Wrappers
Take a dumpling wrapper and place a small spoonful of the filling in the center. Moisten the edges of the wrapper with water, fold it in half, and press to seal. Make sure there are no air pockets. Repeat until all filling is used.
Soup Preparation

Prepare the Broth
In a large pot, bring the chicken or vegetable broth to a boil. Add the soy sauce and sesame oil. Season with salt and pepper to taste.

Add the julienned carrot and zucchini to the boiling broth. Let cook for about 3-4 minutes until slightly tender.

Gently add the prepared dumplings to the broth. Cook for about 5-7 minutes until the dumplings float and are cooked through.

Add the Noodles and Spinach
Add the somen noodles and fresh spinach to the pot. Cook for an additional 2-3 minutes until the noodles are tender and spinach is wilted.
