Marinade Preparation

    Mix the Marinade

    In a medium bowl, crack the eggs and whisk them until well beaten. Add the lemon juice, garlic powder, paprika, salt, and black pepper to the bowl. Mix until all ingredients are fully combined and create a smooth marinade.

Fish Preparation

    Marinate the Mahi Mahi

    Place the mahi mahi fillets in a shallow dish. Pour the egg marinade over the fish, ensuring each fillet is well-coated. Cover with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to penetrate the fish.

    Prepare the Grill

    Preheat your grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.

    Grill the Mahi Mahi

    Remove the mahi mahi from the marinade and let any excess drip off. Place the fillets on the preheated grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and has nice grill marks.
