Korean BBQ Beef Preparation

    Marinate the Beef

    In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, chopped green onions, and black pepper. Add the flank steak and coat it well with the marinade. Cover and refrigerate for at least 30 minutes or overnight for better flavor.

    Cook the Beef

    Preheat a grill or skillet over medium-high heat. Remove the beef from the marinade and cook for about 4-5 minutes on each side, or until desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.

Slaw Preparation

    Make the Slaw

    In a large bowl, combine shredded green cabbage, shredded carrot, and shredded red cabbage. In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved. Pour the dressing over the cabbage mixture, toss to combine, and let it sit for at least 15 minutes. Before serving, sprinkle sesame seeds on top.

    Prepare the Spicy Mayo

    In a small bowl, mix together mayonnaise, Sriracha sauce, and lime juice until well combined. Adjust the spice level by adding more Sriracha if desired.

    Assemble the Tacos

    Warm the corn tortillas in a skillet or microwave. Layer sliced Korean BBQ beef, slaw, and a drizzle of spicy mayo on each tortilla. Top with fresh cilantro. Serve immediately.
