Marinade Preparation

Prepare the Marinade
In a medium bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, chopped green onions, black pepper, and red pepper flakes. Whisk until the sugar is dissolved and the marinade is well mixed.

Marinate the Meat
Place the beef, pork belly, and chicken thighs in a large resealable plastic bag or a glass dish. Pour the marinade over the meat, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Grill the Meat
Remove the marinated meat from the refrigerator. Shake off excess marinade and place the beef, pork belly, and chicken thighs on the grill. Grill the beef for about 5-7 minutes on each side for medium-rare. Grill the pork belly for about 8-10 minutes, turning occasionally until crispy. Grill the chicken thighs for about 6-8 minutes on each side until cooked through.

Rest and Slice
Once cooked, remove the meat from the grill and let it rest for 5 minutes. Slice the beef and chicken into thin strips.

Prepare the Serving Platter
On a large platter, arrange the grilled meat slices. Serve with lettuce leaves, sliced cucumbers, kimchi, and sprinkle sesame seeds on top.
